Emily
Hi, I’m Emily. I love to eat. And, I am passionate about nutrition and health.
So, no wonder my blog is about food and nutrition!
My story starts in 2005, when I was having many cravings. No, I wasn’t pregnant! But when it came to my “40 hours per week,” something was lacking. I was in my mid-20s, and I had a great career as a web consultant going. But daily, I was craving meaning, beyond a paycheck. I was craving people, not computer screens. Activity, not desk chairs. Creativity, not code.
I had already dug into nutrition, frankly, out of fear. I was afraid of gaining the extra weight that seemed – albeit erroneously – an unavoidable part of growing up. Silly, but true. Determined to learn how to eat right, I went to my local Borders in search of the most authoritative, science-based nutrition book I could find. As I read, I was struck by how much I didn’t know about food – such what whole grains are and why we should eat them. I began to improve my diet (which wasn’t that bad, it just wasn’t that enlightened either), and I noticed improvements in how I felt and what I could accomplish in my day-to-day life. I was shocked that at age 25 I lacked vital knowledge about eating – something everyone does! This revelation inspired me to share my great discovery with others.
In 2005, I took a leap of faith and left my job to study nutrition, full-time. I have never looked back.
Now, a word about the title of my blog. I believe that food is something to be enjoyed. Now, I’m sure some people will say they enjoy certain dastardly-unhealthful foods, which shall remain unnamed here because this is a blog about good food. So when I say enjoy, I mean truly relish in food that is tasty and nourishing. The kind of food that makes you feel good both while you eat it and thirty minutes after you are finished. Because when you eat to enjoy, you eat with mindfulness. You choose wholesome foods that fuel your body with the nutrients and health-promoting compounds it craves. You prefer quality over quantity. I don’t think I’m the only one with this idea. In fact, here’s a great article from the New York Times about this growing philosophy about eating.
I hope you enjoy my blog. I hope you find it useful, informative, and inspiring. Thanks for reading!
